Our carpaccio is tenderloin, trimmed, rubber with a pepper spice (Black, white, green, pink peppercorn), then hard seared, and frozen. Served raw but has a nice texture to the outside due to the hard seer. We top our Carpaccio with pickled shitake, parmesan, mixed herb, and tomato ponzu.
